I actually went to Uno Mas Fresh Mex twice in the past week and forgot to take a picture of their burrito bowl because I felt so hungry, so I went back another day to grab some tacos. I typically order their burrito bowl on a day when I feel very hungry, but I order their tacos when I want something lighter. Grilled fish taco with cabbage slaw and jalapeno lime crema and breakfast taco with scrambled egg, potatoes, chihuahua cheese, and fire roasted jalapeno salsa Uno Mas Fresh Mex offers more freshness, color, and flavor to their dishes than your average fast food Mexican restaurant, but avoids being as commercialized and unauthentic as Chipotle.
I would place Uno Mas Fresh Mex somewhere between your authentic fast food Mexican restaurant and Chipotle. Other than your typical options that most taco trucks and shops offer, Uno Mas Fresh Mex offers fish, shrimp, and avocado as main proteins/fillings for street tacos and corn, flour, and romaine lettuce leaves for tortilla shells. Hard to go wrong with a truck that specializes in tacos, but hard to stand out as well and I think Uno Mas Fresh Mex does a stand out job in standing out. You can see from the long lines that typically form that Uno Mas Fresh Mex harbors a fanatic following. Of the food trucks that come to the ICT Pop Up Park, I would vote Uno Mas Fresh Mex as my favorite. I always get excited for Uno Mas Fresh Mex days at the ICT Pop Up Park.
